The Weber ASW 560 Special Purpose Skinner is an automated high-performance, control-cut, conveyorised derinding machine. The new machine was unveiled at this year’s Interpack trade fair in Düsseldorf. It combinescutting or flattening with Weber’s automated incision technology, thus virtually eliminating the need for manual post-processing. Since two operations are combined in one machine, the material flow is significantly increased.

 

 

KNIFE OR PRESSURE ROLL

The new skinner is ideal for derinding pork parts fully automatically, especially the pork belly and the cheek. The operator can choose between a knife roller and a pressure roller positioned upstream. Use of the knife roller to cut into the product for derinding provides optimum derinding results with less than 1 per cent rind residue (temperature-dependent) on cheeks. The use the pressure roller reduces the formation of wrinkles in the derinding process, thus minimising leftover rind on the product. Additional manual cutting is no longer necessary; post-processing, especially with deep-cooled material, is much less time-consuming. In addition, automatic incision control in the derinding process ensures a clean first cut.

 

PERFORMANCE AND QUALITY FOR INDUSTRIAL APPLICATIONS

The skinner has a cutting width of 560 mm and a thickness setting 0—4 mm. The pressure device is height adjustable to 120 mm and the customer can choose between a rubber or pneumatic roller. The linear concept of the ASW 560 allows optimal integration of the machine into the butchering process. Another key advantage is the ability to install and remove all product-guiding parts with no tools, thus ensuring short setup times and, together with the special Weber hygiene design, fast and convenient cleaning. In addition, the skinner has a spring-mounted blade holder that adjusts itself to different rind textures, thus ensuring a cleanly derinded product. In developing the machine, the company paid special attention to the safety of both the product and the operators. On the one hand, a PVC-coated feed and discharge conveyor ensures that no plastic pieces end up in the product in the event of damage. The machine is also equipped with a stable safety hood. A variety of accessories are available, allowing customers to optimally adapt the machine to their specific needs. Different blade shaft distances or pressure roller diameters (184 mm, 196 mm and 240 mm) are also available.
