The ST820 will process prime wings, midwings and small size drums. This machine needs to cut through the bone/knuckle in order to get a good quality end product. Machine speed is 52 pcs/minute, it takes some training to get close to full capacity. If they can load 50 pcs/minute they are considered very well trained.
The ST840 will process prime wings, thighs and drumsticks. This machine can be used as a snack machine and a deboner all in one. It will debone prime wings, thighs and drums completely or is easily transformed into the snack machine that processes prime wing snacks, Pirzola’s (Turkisch dish) and drumsnacks.
As this is a diaphraghme based machine it doesn’t have to cut through the bones and gives a better looking end product. Note that this machine cannot process midwings! Machine speed up to 45 pcs/minute (of course with sufficient air pressure).
Both machines are equipped with an inverter that allows the operator to start the training on slower speed until they get the hang of it.
